Autumn is in full swing, and everyone is looking forward to that big family meal on Thanksgiving. Leading up to that, if you'd like a nice warming recipe, try these lamb meatballs!


3 Servings

Ibiza-inspired spices blend irresistibly with ground lamb to create this warm, hearty exotic meal. A touch of caramelized apple balances out the dish.


For the meatballs:
• 1 lb ground lamb
• 1 Egg (optional)
• 2 1/2 Tablespoon mint leaves, minced
• 3-4 Garlic cloves, minced
• 1 1/2 teaspoon ground cumin
• 1 teaspoon marjoram
• ½ teaspoon all spice
• ¼ teaspoon ground black cardamom
• 1/8 teaspoon ground cinnamon
• few turns of black pepper
• 1 1/4 teaspoon sea salt

For the salad:
• 1 small red cabbage, thinly sliced
• 1 Granny Smith apple, julienned
• 4 scallions cut on the bias
• Mint leaves for garnish
• Juice of half lemon
• 1 Tablespoon extra virgin olive oil
• Sea salt and black pepper as per taste

For the apple sauce:
• 2 Granny Smith apples, peeled, cored and thinly sliced
• 1 Tablespoon butter or ghee
• 1 small stick of cinnamon
• ¼ cup of water
• pinch of sea salt


For the meatballs:
Set oven to 350 F, line a baking sheet with parchment paper and set aside. In a medium bowl, mix all the ingredients till well incorporated. Hand roll about 2-inch meatballs and lay them out on the baking sheet. Place them in the oven for 20minutes.

For the salad:
Toss all ingredients in the dressing and keep it in the refrigerator until ready to serve.

For the apple sauce:
In medium pan, melt butter, add cinnamon stick and rest of the ingredients. Combine and cover with a lid. Cook until soft, cool down and blend.
