Easy, Gluten-Free Banana Bread

Ingredients
  

  • 3 Ripened Bananas
  • 2 Cups Almond Flour
  • 1 teaspoon Baking soda
  • Cup Stevia
  • 3 large Eggs
  • ¼ Cup Coconut oil
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon

Instructions
 

  • Preheat oven to 350° F.
  • In a large mixing bowl, beat eggs and combine with mashed bananas. Mix in olive oil and vanilla.
  • In a separate bowl, combine dry ingredients. Mix together the almond flour, baking soda, cinnamon and stevia.
  • Combine the two mixtures together until well blended. (Add in chopped walnuts or dark chocolate chips if desired)
  • Prepare loaf pan by coating with coconut oil to prevent sticking. Pour batter into loaf pan.
  • Bake 45-60 minutes. Test by poking with a toothpick to determine doneness. (Toothpick will come out clean when baked fully)
