Easy, Gluten-Free Banana Bread

- 3 Ripened Bananas
- 2 Cups Almond Flour
- 1 teaspoon Baking soda
- ⅓ Cup Stevia
- 3 large Eggs
- ¼ Cup Coconut oil
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
Preheat oven to 350° F.
In a large mixing bowl, beat eggs and combine with mashed bananas. Mix in olive oil and vanilla.
In a separate bowl, combine dry ingredients. Mix together the almond flour, baking soda, cinnamon and stevia.
Combine the two mixtures together until well blended. (Add in chopped walnuts or dark chocolate chips if desired)
Prepare loaf pan by coating with coconut oil to prevent sticking. Pour batter into loaf pan.
Bake 45-60 minutes. Test by poking with a toothpick to determine doneness. (Toothpick will come out clean when baked fully)
