Cashew cheese is a dairy-free (and absolutely yummy) alternative made by soaking cashews in filtered water and blending them to a spreadable consistency. You can add different herbs and spices to suit your taste.

Here is my favorite basic recipe. I recommend starting with the basic recipe and adding your favorite flavors that go along with the meal or snack you are serving it with.

INGREDIENTS:

  • 1 Cup raw cashews (soaked for at least 2 hours, and up to 24 hours)
  • 1/4 Cup filtered water
  • 1/4 Cup nutritional yeast
  • 1 Tbsp. lemon juice
  • 2 cloves garlic
  • 1 Tbsp. raw apple cider vinegar
  • 1 tsp. Dijon mustard
  • sea salt + cracked pepper (to taste)

Place all ingredients into a high-speed blender or food processor, and blend until creamy (the consistency is similar to that of cream cheese).

Add your favorite herbs and spices to compliment the dish you are making.

Enjoy!

Store in an airtight container in your refrigerator for up to a week.
